Sterlet – “Royal Taste”

I. Behind the little caviar hides a “Great Taste”

Sterlet (Acipencer Ruthenus) is the smallest fish in the sturgeon family. She begins to give caviar very early, already at the age of five. Sterlet caviar is small, only 1 to 2 mm, but the aftertaste of this caviar is simply magnificent, unique and incomparable with other sturgeon fish. The sterlet is the only sturgeon that lives only in fresh water. The color of eggs in sterlet is beige, gray or pearl-platinum. The eggs are small, soft, tender and incredibly light. Once in the mouth, they very gently dissolve in the mouth and leave a luxurious, indescribable and magical aftertaste. In the people “from time immemorial” sterlet caviar has always been called Tsar’s caviar, because it was sterlet and sterlet’s caviar that were always served on the table to the Russian Tsar and it was sterlet caviar that was delivered to many royal courts of European countries, which is why it is called “Royal” or “Royal caviar”.

Do you know that:
– For all weddings of the royal family, there must always be sterlet and sterlet caviar on the table.
– 200 years ago for one two-three-kilogram sterlet it was possible to exchange a horse.
– On his long campaigns, Alexander the Great always took with him a lot of canned sterlet caviar to feed his troops.
– Cleopatra, the first woman in the world, began to use Sterlet caviar as a face mask, so her skin was always toned, fresh, without wrinkles and had a beautiful appearance.
– It has been scientifically proven that people who eat caviar live 10-15 years longer than people who do not know the taste of caviar.
– If you eat sterlet caviar during a holiday or a banquet, then in the morning you will feel great and there will be no “difficult” state after a stormy party, thanks to sterlet caviar.

II. About Sterlet

Appearance: In appearance, the sterlet has a gray-brown color, sometimes with light yellow patches on its body. Males and females are exactly the same in color and size, so it is quite difficult to tell them apart. Fish grow up to 1.2 – 1.5 meters in length and from 0.5 kg to 16 kg in weight. The body of the sterlet is covered with bone plates. The head and mouth are elongated, there are no teeth.
Habitat: Sterlet lives only in clean waters with running water and sufficient oxygen. The sterlet lives in most of the rivers that flow into the Black, Azov and of course the Caspian Sea. The sterlet can also be found in the Siberian rivers, on the Ob and Yenisei. In Siberian rivers, sterlet grows larger than in European rivers. Females prefer a bottom way of life and spend most of their time at the bottom. Usually they choose the deepest sections of the river and settle at a depth of 8 to 30 meters and always on a pebble or sandy bottom. Males spend most of their time on the surface of the river, as males are much more active than females.
Nutrition: Sterlet is a predator, lives up to 30 years. It feeds on small invertebrates, which it catches at the bottom; these can be small crustaceans, soft-bodied organisms, worms or insect larvae. The grown-up sterlet sometimes feeds on small fish. The sterlet loves to eat caviar of other fish very much.
