CITES (the Convention on International Trade in Endangered Species) is an international agreement that regulates the trade of wildlife products, including caviar. All caviar sold by London Caviar House is CITES-certified, meaning it has been legally and sustainably produced, with full traceability from farm to tin.
Buying CITES-certified caviar is the only way to be certain that your purchase is genuine, legal and not contributing to the decline of wild sturgeon populations.
Unopened caviar should be stored in the coldest part of your refrigerator, ideally between 0°C and 4°C. Never freeze fresh caviar — this damages the delicate egg membranes and significantly affects flavour and texture.
Once opened, caviar should be consumed within 2 to 3 days. Cover the tin tightly with cling film and return it to the fridge immediately after serving.
Caviar is traditionally paired with unsalted blinis, crème fraîche, finely chopped shallots and hard-boiled egg. Classic drink pairings: ice-cold vodka, dry Champagne or a crisp white Burgundy.
